It would be a means of securing sanitary conditions of this kind if the public had free admission behind the counter. I have often turned away from the soda fountain without patronizing it when I have seen, by accident, the method of washing the glasses and the insanitary conditions with which the dispenser of the beverage was surrounded. As kitchens of public restaurants should occupy the front space next to the street, so should the counter of the soda fountain be opened to the public. Publicity is the best sanitary activity which is known.
