Java Coffee (ground very fine)..... | 2 pounds. |
Sugar............................ | 4 pounds. |
Alcohol (deodorized).............. | 2 pints. |
Water........................... | 6 pints. |
Moisten the Coffee and pack in a suitable percolater; add the remaining liquid to thoroughly exhaust it. At a very gentle heat evaporate the Alcohol and add the Sugar. Make to the measure of one (1) gallon by adding thin, simple syrup,
Mocha Coffee..................... | 4 ounces. |
Java Coffee.................... | 4 ounces. |
Sugar.................................................... | 7 pounds. |
Water, Boiling, a sufficient quantity.
To the mixed coffee, first slightly moistened and packed in a tin percolator, add the Boiling Water until one-half (1/2) gallon of the product is obtained; in this dissolve the Sugar and strain, if necessary.
Coffee (roasted and ground)..... | 8 ounces. |
Boiling Water.................. | 8 fl. ounces. |
Sugar.......................... | 120 ounces. |
Make an infusion, filter, add the sugar, dissolve and strain, if desired.
Extract of Coffee............... | 4 fl. ounces. |
Syrup......................... | 12 fl. ounces. |
Mix well.
